Vermont this Saturday

We are heading to Vermont this sat. 3 days before Christmas.... In cut where I live there is no snow .So I'm in hopes I get to see some and see   some old friends there to..it should be fun and to do some swimming also..lol

Simple Casserole Supper

1 pound beef
1/4 c. White Rice
1 can French onion soup
1 can french fried onion rings

Preheat oven at 325.
Brown ground beef , drain and place
In sprayed baking pan Add rice, soup,and
1/2 water
Cover and bake 40 mins.

@When you wash lettuce and greens for a salad,be sure to dry the leaves between paper towels. Dressing willbe watered down if water is left on the leaves.
 @The name of a small rice- shaped pasta known as {orzo} means * barley.

Orange French Toast

1 egg, beaten
1/2 c. orange juice
5 slices raisin bread
1 c. crushed graham cracker
2 T. butter

*Combine egg and oj in bowl.
* Dip each slice of bread in cracker crumbs
* Fry in butter in skillet until brown


makes 5 servings

Seafood Risotto


2 T. extra virgin olive oil
1/2 c. chopped onion
1 t. minced garlic
2 c. Carnaroli rice
1/2 c. white wine
3 c. warm chicken stock or broth
1 fresh lobster tail
4 ounces fresh rock shrimp 
1/4 c. yellow corn
1/4 c. sliced leeks
2 T. mixed chopped herbs
3 T. diced tomato
2 T. butter
salt / pepper

Heat oil in a large sauce pan over med. heat.
Add onion,and garlic cook
1 min.. Add rice, stirring to coat
Cook 2 mins.Add wine and cook stirring . 2 mins. 


makes 4 servings

Shrimp and Crab Finger Scampi

ingredients:
2 T. canola oil
20 large shrimp peeled and devained
1 c. dry white wine
20 large crab fingers or crab claws
3/4 c. butter
3 T.  fresh parsley
salt/pepper

Heat oil in skillet .Add shrimp and cook  2 mins.
on each side. put shrimp on plate.
Add white wine to skillet stirring witha wooden spoon 
bring mixture to a boil.
Cook 5 -7 mins.
Add shrimp and crab to skillet.
Cook 1-2 mins.
Remove pan from heat and stir in butter,
Stir in parsley salt and pepper to taste.

makes 4 servings
